  Mamaw's Fruit Salad

1 20 oz. can chunked pineapple

2 apples (cut into ½ - ¾ inch pieces)

2 bananas (cut into ½ inch pieces)

2 oranges (section and half sections)

1 Cup grapes (halved and seeded)

1 Cup pecans

2/3 Cup sugar

2 eggs (beaten)

2 Tablespoons plain flour

 

Combine eggs and juice from pineapple (+ enough water to make 1 cup, if needed) in top of double boiler. Add eggs. Combine sugar and flour (sifted) together. Gradually add sugar/flour to juice/eggs mixture, stirring after each addition. Then heat in double boiler until thickened. Pour over fruit and nuts (do not cool first). Stir gently. Top each serving with real whipping cream, no sugar added, if using as a dessert.

 

This makes a lot more than it may seem. Mamaw made this for every Thanksgiving and Christmas dinner. We looked forward to the fruit salad as much as we did the turkey or ham.
